

You need a keen eye to be a Stillman. With hundreds of litres passing through the spirit safes every few minutes and four giant stills boiling almost constantly you have to know what you are looking for, and what George is looking for is the middle cut, the heart of the distillation where the spirit is just the right strength to be casked.
Luckily George has been at Bunnahabhain since 1975 so he knows a thing or two about our stills and there is no need to ask if he gets it right.
