This Mashing process is repeated several times until the draff, which is the ‘porridgy’ remains of the Grist, is drawn off and can be recycled as cattle feed. The liquid, called wort, is then held in a receiver, called the underback, from whence it is passed through a cooler and on to the washback, where yeast is added.
